With the outbreaks of pathogenic E coli and Salmonella from improperly cook meat, more attention has been focused not only only preparing food properly but on making certain those preparing them keep their hands and cooking surfaces clean.

In other places, hospitals in particular, hand washing among physicians and the house staff is by far and away one of the best ways to prevent the spread of pathogenic organisms from one person to another. The same can be said in day-care centers and nursing homes.

The NFSD Food Code lists a number of references in scientific journals concerning the use and efficacy of various commercially available soaps.
