There is a database on Cooked food mutagens, but I have not been able
to find out how these mutagens work, and what kind of damage can
occur. Can you please explain how cooked food mutagen are formed and
how they work.  

 I know that soy products are soaked in a alkaline solution to remove
phytates and the carcigen lysinaline is formed.
