Hi Paul.. Both would be suitable but red worms are a little easier to raise and are a bit more prolific. If you have easy access to both, then choose the red worms but if you only can get night crawlers than your results will not differ enough to worry. Since we know what you are going to prove to be fact; it may be to your advantage to interject a bit of uniqueness to the project...Will they grow in and transform other things (shredded paper waste, yard waste, organic waste, etc) into useful compost. Waste matter being the problem it is needs everyone working to find ways to cope with it and what better way than to recycle into something useful. Give it some thought and good luck in yuor project.
