The mechanisms of temperature control on plants are very limited. This means that the temperature of the tissues will be very similar to the environment. If you keep a banana on a cool place, it's temperature will fall. This will not happen with your dog or you little sister, for example (please do not try, just believe me). Mammals have a very efficient control of temperature. Temperature usually has a very broad effect on any plant. It alters the "speed" of the enzymes, metabolic pathways and of the whole individual. It is very difficult to say exactly which point of control counts more for this change in metabolism. What we can say is that the whole plant (or fruit) is slowing down its metablism
