A search of the literature available and consultation with a med-vet entomology technician turned up a blank, but I think that the droplet is an overflow of the host's blood, combined with fluid from the feeding insect. This probably functions to release pressure in the gut as the mosquito reaches the end of its capacity to retain liquid.
