In general, fats that are liquid at room temperature are considered unsaturated. However, there are a variety of fatty acids that make up a fat, some of them will be saturated, that is have no double bonds and hold all the hydrogen atoms possible, and some will be unsaturated, that is have at least one double bond and have room for additional hydrogen atoms. It is the net number of saturated vs unsaturated that will determine solid vs liquid. If a fat is liquid at room temperature, that means that there are more unsaturated fatty acids than saturated.
