Cheese molds produce few toxins. However, to be on the safe side, it would be a good idea not to eat moldy cheese. For hard cheese,discard about 1/2 inch of the cheese where the mold is visible. Soft cheese, like cream cheese, brie and cottage cheese should be discarded if moldy. For mold ripened cheese, such as blue, gorgonzola, Roquefort and Stilton, check the color and pattern of the mold. If it's different from the ususal blue or green veins, and if you see furry spots of white, pink, blue, green, gray or black flecks, discard the cheese.
