There are different ways of doing this.  I can think of two:

1) Take an aluminum foil, wrap it around the egg as tightly as possible with
minimum wrinkles and then measure the area of foil

2) Coat the egg with very thin gum/sticky material.  Then stick very tiny 
beads
in a single layer on the surface of the egg.  Then count the number of bead.
From this you can estimate the surface area.
