It's difficult to answer a question like this without more information; I'm not sure what you want to know!

Low temperatures invariably act to preserve chemical structures; many reactive molecules have been isolated and studied by the simple technique of lowering the temperature sufficiently. So Vitamin C should not be affected by cold, except to increase its shelf life.
