To be honest I contacted US Gypsum,
leading manufacturer of gypsum based products in the USA. Their technical
staff advises using a commercially available product known generically as
"plaster retarder" (mixture of hydrolyzed keratin and hydrated lime) . Or
you can try "cream of tartar" (potassium hydrogen tartrate) which should
be obtainable at your local grocery store.
Gypsum Trivia...
- Did you know the average person ingests28 lbs of gypsum ? Check it out!
- Did you know that the ancient Egyptians used gypsum plaster in some of
the pyramids? Look

- Dunes of gypsum may exist on Mars! Read all about it.
- Want an illustrated introduction to gypsum? Here it is!
