I would suggest the following two textbooks for an upper level ecology 
course in high school:

Smith, R.L. and T. M. Smith 1998., Elements of Ecology 4th edition
Benjamon/Cummins ISBN 0-321-01518-5

Molles, Manuel C. 1999.  Ecology, Concepts and applications
WCB McGraw Hill  ISBN 0-07-042716-x

A possible lab manual might be Cox, George W. Labnoratory Manul of General 
Ecology, Wm C. Brown, though it may or not be appropriate depending on the 
level of your students.

The Ecological Society of America maintains a web site that has links to 
their lab manual which has some nice lab exercises
