I remember hearing a reference on an astronomy documentary stating at one 
image for a radio telescope took about 75 days to complete.  Is this true?

By logic, I would assume that Arecibo images would need the shortest 
exposure and VLBA images would need the longest exposures.  Arecibo has the 
largest effective dish size, and a low resolution.  VLBA has the highest 
resolution, and high resolution details are generally fainter unless an 
effort is made to look at the brightest things.
