The best way to isolate oil of lavender is by steam distillation. This is a basic laboratory technique, and is discussed (among other places) as part of the chemistry site at the University of Puget Sound. You might also check out a good undergraduate organic lab text, like Zubrick's The Organic Chem Lab Survival Manual (Wiley).
