I tried to read a much as I could from you very informative archives. 
However I already knew that pudding was a "plasma". I found the 
explanation of the different properties of starch very helpful, however it 
didn't explain why pudding "happens". I know that you add heat energy to 
the substance and that gets the ball rolling but what is so special about 
the combination of these ingredients that makes them turn into pudding?
