This is definately a strange observation that you observed. There is no chemical or electrical reason why the Copper would deposit on one side and not the other. However, I do have some ideas as to why this may have occured. First, the copper must be clean for the plating to occur properly. If only one side of your electrode plate had been cleaned then that is where the copper would be deposited. The other reason I could think of is if there were some type of masking film placed on one side of your electrode. I have seen thin, transparent films placed on metals to be plated in order to create intricate designs, so I would go back and make sure that there is no thin plastic film on one side of your electrode, much like you would find on the display of electronics when you purchase them.
