Squirrel meat has roughly the same nutritional composition as any other type of game meat and tends to be fairly lean, that is, low in fat. The fat content varies somewhat with the time of the year (for example, is higher in the fall as the animal is storing up energy for the winter), but is always fairly low. It is a reasonable source of protein, iron, zinc, and most B vitamins. As with all meats from wild animals, it should be thoroughly cooked prior to eating to destroy any pathogenic microorganisms or parasites that may be present.
