Subject: why do some flower colors fade with vinagar gas and others do not?

I have a student doing a science fair project where she takes flowers and
suspends them in a jar over vinagar, and seals the jar. In a few days all
of the colors fade except yellow and green. I know there is a logical
explaination for this but I can not find it. PLEASE HELP!!!
