Subject: How did prehistoric humans make the jump to eating only cooked meat?

According to all of the leading authorities meat needs to be cooked at a
certain temperature in order for us not to get sick. Did the ability to
eat raw meat "evolve" and for what reason would humans have begun cooking
their food in the first place?
