Subject: Is it possible to figure out quantitative data on enzyme action?

Okay, here goes nothing...
     I have a couple of questions, because i haven't really found a web 
site that says ANYTHING about this...Is it possible to actually see the 
activity of an enzyme? For example, is it possible to see the effect of 
say, salt on an enzyme? 
     And, is it possible to do an experiment on enzyme activity and figure 
out an exact numerical quantitative data figure? Like, could you take the 
enzyme activity and put the amount of activity into percentage of activity 
or speed of activity or whatever?
