when you  put beetroot in differnt concentrations of alcohol, the higher 
the concentration the more anthocyanin which leaks out. i know that 
proteins can be denatured by heat, can they also be denatured by alcohol? 
or is it simply that the phospholipids dissolve in the alcohol.
