You idea about the lack of water may well be correct, as of course this 
will increase the concentration of the remaining enzyme. It is also likely that 
the older the tuber the more likely the chance of infection releasing enzymes.
Is the tuber shooting as this too will increase the enzyme activity. One 
cautinary note however, how do you judge age (did you remove them from the 
soil?), most food retailers store food in large warehouses prior to 'fresh 
delivery' to the stores. Although roation of stock results in the age 
being uniforms it is not guarenteed.
