When metals react with acids, an oxidation/reduction reaction occurs.  In 
that sense, there really are no "non-oxidizing" acids that react with 
metals.  Here's what happens:
HA (aq) + M (s) -->  MA (aq) + H2 (g)
The hydrogens donated by the acid are reduced to elemental form and the 
metal is oxidized and forms a salt with the acid's anion.
I imagine you haven't found info in lit because of the confusion about 
oxidizing agents and non-redox reactions.  All metal + acid reactions are 
redox reactions.  I suspect the texts you are looking at will make more 
sense when you see how the general formula above works.
