I am the sole teacher in a charter high school.  One of my students asked how 
yogurt is made.  We can find material on what it takes to make yogurt, but not 
how the mircobiological process works or why it works.  This is what we need, 
the nitty gritty of the process that changes the bacteria and milk into a 
gelatin.
