Plant organs are things like leaves, stems, roots, flowers, and fruits. You are 
correct that an artichoke heart is not at all like a human heart in structure 
or function. Similarly, ears of corn are not like human ears, and heads of 
lettuce are not like human heads. Unfortunately, confusion can be created 
because some plant terms are also applied to animals and animal terms applied 
to plants. 

Plants have a circulatory system composed of xylem and phloem but it uses no 
pump, like a heart, to run it as does the human circulatory system. Plants 
don't have a brain or anything really similar to a liver or kidney.
