Subject: why do purple beans turn green when they are cooked? And how did they get t

We are going purple beans in our garden, and wondered how they got to be 
purple.  Was it through recessive genes or genetic engineering?  Then when we 
cooked them, I wondered about the chemical reaction that caused them to turn 
green?
