In my view spoilage would represent growth of certain bacteria referred to 
as "spoilage" organisms whereas decomposition would represent the 
chemical/biochemical breakdown of the food product. A good general 
reference for food microbiology would be the latest edition of "Food 
Microbiology" by Jay.
