Hi Stacey.

There are three areas of science your project might come under. You have correctly picked out two 
of them -- Botany and Chemistry. The third is Agriculture, because of the importance of this 
question to the fruit and wine industries.

Which category you would put it in depends on your main interest in doing this project. I am 
talking about an eventual interest, not necessarily something you will be able to explore at this 
time, but rather, where your project is leading.

Chemistry is about the study of different substances, and how they can change. If your interest 
was in what substances make the fruit have different pH, and how these substances change in 
chemical and biochemical reactions during the ripening process, then the project should be 
classified as chemistry.

Botany is the study of types and varieties of plants. If your interest was in how different types of 
fruits are similar or differ in the way their pH changes during the ripening process, then your 
project should be classified as botany.

Agricultural science is the science of how we can efficiently produce crops. If your study was part 
of a larger project looking at how we might modify fruit varieties, or handling procedures, so that 
we could more efficiently deliver fruit with the desired mix of sweetness and acidity to the 
consumer, then this would be an agricultural science project.
