Hi Marc,

There are many points that could be raised here, but I'll keep the answer 
short.

You are right that we need plants as they use up carbon dioxide and 
produce oxygen. Animals, including humans, use oxygen and produce carbon 
dioxide, so being the only human would not stop you being able to breathe.

Assuming you were in a place where you could find food, water and shelter 
there is no physical reason why you could not survive, although it would 
be a very lonely experience!
