At very high temperatures the rate at which the water turns to steam is so high it lifts the water droplet up and away from the heat on its own cushion of gas just like a hovercraft. I guess this results in a small gap between the water and the heat source which being a gas insulates the remaining water from the heat and so keeps it liquid longer.
