Subject: Role of Catechol Oxidase in different fruits.

I am conducting an experiment to discover the different concentrations of 
catechol oxidase in a range of different fruits. However in order to do this i 
need to find some background information of the role catechol oxidase plays in 
fruits. I have searched the internet and numerous text books, all to no avail. 
I would greatly appreciate it if you could refer me to a website with relevant
