Usually the time/temperature requirements are lower for both sanitization and
sterilization for wet heat vs. dry heat? What accounts for this difference?
When a certain temperature is mentioned I assume the surface temperature gets
upto that temperature regardless of wet or dry heat. Thanks. FK.
