The field is physiology and the scientist who studies the field is a physiologist.

While I cannot provide you with an interview (I am a molecular biologist and pharmacologist), I can tell you what a physiologists does.

A physiologist studies the integrative function of the bodies tissue and organ systems. The field is divided into what you may think of as "subspeciaties" based upon the organ and/or tissue. for example, a cardiac physiologist would study the physiological function of the heart. How the heart beats, how its output and pace is affected by hormones released in the body, and how this goes awry in disease.
