Growth of the yeast is dependent mainly on the process parameters such as availability of nutrients, pH, temperature etc. It is normally observed that growth of most of the yeasts takes place at lower pH.

The present question lacks clarity with respect to whether you need to know about the effect of pH on growth of the yeast or the fermentation process. In most of the cases the pH values for growth and fermentation varies dramatically over a period of time. So, if we consider growth of the yeast, it could be carried out at slightly lower pH values, which also take care of bacterial contamination problems.

The fermentation process however requires stringent pH conditions as most of the enzymes that contribute to fermentation process function best at that pH. These conditions also ensures high yield of the fermentation product.
