My vote is for the way the brain is able to completely "refunctionalize" itself, whether by synaptic plasticity at the level of modulating synaptic output, regrowing and pruning back nerve terminals, or distributing patterns throughout multiple essentially "degenerate" pathways (in the quantum mechanics sense) to underlie our changing thoughts and actions.
