I am reading some papers about bateria polysaccharides, specificaly levan. I
do not understand why people purified the polysaccharide by alcohol
precipitation from aqueous solutions (i.e.culture medium), and said that the
polymer was able to be precipitated by centrifugation. Is water denser than
alcohol?
