There are cells in your iris that make pigments, which are inside the cells.
You would have to destroy the iris and its integrity in order to be rid of these cells, and that would spell big problems for your eyes.
Some drugs have side effects on eye color, which are not that drastic but noticeable, because they interfere with the normal metabolism making the pigmented compounds in the iris.
Please note that people with blue eyes may seem more attractive to some (myself I only find women with brown eyes attractive), but the lack of pigmentation also means that more light stress reaches their lens and retinas over their lifetime.
It is frankly impossible to make a drug or chemical that only interferes with one step of metabolism; they all have side interactions. That is just how atoms and molecules and the universe work.
