Anthocyanins are members of water soluble plant pigments basically
flavonoids and phenolics in nature. They contribute to color of the
flowers. They play a role in attracting insects for pollination and also as
protection against harmful ultraviolet rays from the sunlight. 

They can be commercially used as pH indicators in natural dyestuff. They
are also known inhibitors of nitrate reductase. They have good food and
nutritional value and possess antioxidant property. They are also effective
against cancer, diabetes and aging, inflammation and bacterial infections.
