At this time bone marrow is used as part of the flavor element in making stocks of various sorts. The bone marrow is high in blood and there are some people who will cook the bones and eat the marrow. Blood itself is being used to create some food materials. However, I don't believe the marrow is being used in those processes. Some marrow may be used for specific medical/pharmaceutical purposes but that is beyond the scope of a food scientist.
