Subject: How do you evaporate water that is bound in materials?

There is a big debate in the water damage restoration world.  We have always 
been taught to use dehumidification with dehumidifiers to get the water out of 
a house.  People started to use heat and exhausting it without 
dehumidification.  Some say that it is all about vapor pressure, some say it 
is just about heating things up.  I would like some science to prove what is 
needed because nobody seems to have that for me.
