       I have been doing a chemisty research report on Jell-O.  I have 
found plenty of information on the history of Jell-O, but for some reason 
I can not find any information on the gelling process and the chemistry 
behind it.  Any detailed information that you can provide dealing with 
this would be greatly appreciated.  Thanks.
