While preparing dinner for my family last night, I began to wonder, "Why
does the texture of beef (or other kind of meat) change when it is
cooked?" I know some of the water cooks out of the meat, but does the
meat's cell structure change as well? I would suppose that cell damage
occurs, but what is the extent of this damage?
