Adams Apple:
 The thyroid cartilage of the larynx forms a subcutaneous projection in the 
middle of the neck.

Men often have more cartilage here than women.

The purpose of the cartilage is to protect the larynx.

This site has a good diagram of the larynx, and you will see the "thyroid 
cartilage" labeled.
