You have interesting ideas!   I am unfortunately not aware of any previous
research testing whether music can make fish smarter, so I do not have a
good answer to your main question.  As for mazes, fish are able to navigate
mazes and scientists certainly have used such designs to test other fish
behaviors.  As you might guess, sounds behave somewhat differently when
travelling through water.  Therefore music may not sound the same or have
the same effect on a fish as it does on you.
