I want to research the gluten content of flour. I have tried to use the rinsing method. Mix 1 part water and 2 parts flour, knead, rest, then rise slowly under running water, however, I know that I am losing some of the gluten down the drain. I want to have an accurate way to find out gluten content by weighing the results. This is part of my second year of researching the components of the bread making process. Can you help?
