What I mean is, it just seems so simple. It seems that all you need to do is to 
get an avarage space shuttle, store about 15-17 months worth of food for three 
people, launch the craft, and let it coast to Mars. It seems simple, so why 
hasn't it been done yet?

The short answer is that it's really not so simple. It would be the
furthest any person has traveled from the earth, and also the longest
anyone has spent in space!
