The apple doesn't rot because of the skin. There was only a certain amount 
of bacteria/fungi on the apple and in the bag ( the same for the bologna 
sandwich). The skin protected the apple and preserved it. There was no 
protection for the sandwich and so the bacteria/fungi began breaking down 
the food quite rapidly. This is why you put things in containers with lids 
on them. It helps retard bacterial/fungal growth and keeps the food for a 
longer period of time.
