Modified food starch can be based on any type of food, including corn, 
wheat, rice, potato, tapioca, etc.

Current federal regulations require that the origin of the start be 
labeled, such as "modified wheat starch" or "modified food starch (made 
from wheat and rice). This is because of the increasingly widespread 
incidence of protein allergies.

The amount of protein residual in starches is very low, typically 0.1% or 
less.
