Yes Laurie, hens DO typically cackle after they lay an egg. People that 
study chicken behavior feel that the hen cackles after laying an egg to 
signal to the rooster that she is available for mating.

While researching this question, I had E-mail responses from veterinarians 
in Denmark, Malaysia, the United Kingdom and the USA.  All agreed that 
chickens the world round typically cackle after laying an egg.   

They all also pointed out that hens also cackle at other times as well.  
Many hens will cackle as they eat.  Others seem to cackle all the time, 
being quiet only when the rooster answers.
