I am doing an experiment for one of my classes "how does removing an
ingredient effect the taste of a cookie". I am doing six different
types of recipes. Each recipe will exclude one indgredient. I need
to know the chemisty side of this process. I have found very few
books to help me understand the chemical process. Thanks
