Hi Lori,

Pepsin is the main proteolytic (or protein digesting) enzyme in our gastric 
juices. As such it recognizes a broad range of substrates, transforming them 
into smaller peptides. As for inhibitors, the enzyme is inactive above pH 6. 
Substate-like epoxides will also inhibit. I don't know of any stimulators.
